Spicy Sausage and Mash
A classic dish elevated with extra ingredients for a fresh, smoky flavour. Dairy and gluten-free.
Ingredients
- 750g potatoes
- 6 good quality pork sausages
- 1 small onion
- 1 fresh red chilli
- 1 tbsp oil
- 3 slices of bacon
- 2 tsp paprika
- 400g tin baked beans in tomato sauce
- 100ml water
- 1 tbsp Dijon mustard
- 1 tbsp wholegrain mustard
- 4 tbsp honey
- 5 sprigs of fresh thyme
- 20g dairy-free butter
- 4 tbsp dairy-free single cream
- Salt and pepper
Method
Step 1: Prep Potatoes
Peel potatoes and cut into 2cm cubes.
Step 2: Boil Potatoes
Boil the potatoes in a large pan of water.
Step 3: Bake Sausages
Place the sausages on a baking tray and cook in the oven at 180°C.
Step 4: Prep Aromatics
Chop the onion and chilli.
Step 5: Fry Aromatics
Fry the onion and chilli in the oil on low/med heat until soft.
Step 6: Chop Bacon
Chop the bacon.
Step 7: Add Bacon
Add the bacon to the pan with the onions.
Step 8: Spice
Add the paprika to the pan.
Step 9: Fry
Fry until the bacon is cooked.
Step 10: Simmer Beans
Add the beans to the pan, along with the water. Leave on a low heat to simmer.
Step 11: Brown Sausages
Meanwhile, turn the sausages to get an even colour. Cook until brown.
Step 12: Glaze
In a separate pan add the Dijon mustard, wholegrain mustard and honey.
Step 13: Thyme
Strip the leaves from the thyme by pulling along the stems in opposite direction to the leaves.
Step 14: Combine
Add the thyme to the pan and cook on a low heat.
Step 15: Bubble Glaze
Stir until the honey begins to bubble.
Step 16: Drain
Drain the potatoes once they are soft.
Step 17: Mash
Add butter and cream. Season with salt and pepper to taste. Mash until smooth.
Step 18: Serve
Serve with the beans and the mustard sauce drizzled over the sausages.
Alternatives
The beans are quite spicy, so adjust the amount of chilli added to taste. The meal can be made vegan by omitting the bacon and replacing the sausages with a vegan brand.
