Calzone with Bolognese Sauce
Traditional folded pizza. Great for all the family and a fun way to involve kids in cooking.
Ingredients
For the Pizza Base
- 500g plain flour
- 7g yeast sachet
- 2 tbsp olive oil
- 1 tsp salt
- 300ml water
For the Pizza Sauce
- 500g passata
- 1 garlic clove
- 1 tsp dried mixed herbs
- 1/4 tsp salt, pepper, sugar
For the Bolognese Filling
- 150g beef mince
- 1/2 onion, 2 mushrooms, 1 garlic clove
- 1 tbsp oil, 1 tsp dried mixed herbs
- Red wine, tomato puree, sundried tomatoes, passata
Method
Step 1: Dough Base
Add flour, yeast, salt, and olive oil to a bowl.
Step 2: Combine
Add the water and mix together.
Step 3: Prove
Knead into 4 even rolls. Cover with a cloth and leave in a warm place to prove.
Step 4: Pizza Sauce
Add the passata, garlic, mixed herbs, salt, pepper, and sugar to a bowl for the pizza sauce.
Step 5: Slice Onion
Slice the onion.
Step 6: Slice Mushroom
Slice the mushroom.
Step 7: Fry Meat Base
Fry the mince, onion, garlic, and mushroom in oil until the mince begins to brown.
Step 8: Make Bolognese Sauce
Add the salt, pepper, sugar, mixed herbs, wine, oregano, tomato puree, chopped sundried tomatoes, and tomato oil to a bowl.
Step 9: Finish Bolognese
Stir the passata into the Bolognese sauce and pour over the fried ingredients. Leave on a low heat to simmer.
Step 10: Roll Bases
Dust a chopping board with plain flour and use a rolling pin to make thin pizza bases.
Step 11: Add Sauce
Spread a thin layer of the pizza sauce on the pizza bases.
Step 12: Add Cheese
Add the cheddar cheese.
Step 13: Add Toppings
Add the additional toppings of your choice, followed by a layer of mozzarella. Add some chopped fresh basil.
Step 14: Bake and Fold
Cook in the oven at 180°C for around 10 minutes, until the base begins to brown slightly. Fold the pizza in half to form a sealed crust and return to the oven. Continue to cook for another 10 minutes or until the crust is a golden brown.
Step 15: Serve
Spoon over the Bolognese sauce. Season with pepper and parmesan cheese. Add a fresh basil garnish and serve.
Alternatives
You may choose not to fold some of the pizzas and serve them in the more traditional method, where you can skip the Bolognese sauce. For the pizza toppings, prepare a variety of vegetables and meat into bowls, where each person can choose their own. This is great for kids who may prefer more basic ingredients but still want to be involved in the cooking process.
