Grandma's Pea and Rib Soup
A traditional family favourite, full of flavour and incredibly filling. Dairy-free; gluten-free if using gluten-free flour.
Ingredients
For the Soup
- 250g dried peas
- 1 rack of bacon ribs
- 1 leek
- 1 onion
- 2 carrots
- 1/4 tsp salt
- 850ml water
For the Dumplings
- 150g self-raising flour
- 75g vegetable suet
- 1/4 tsp salt
- 125ml water
Method
Step 1: Soak the Peas
Dissolve the sodium bicarbonate tablets in boiling water, add the peas, and leave to soak.
Step 2: Prepare Ribs
Crack the ribs and soak in water. After at least 2 hours, rinse the peas and ribs well and add them to a large pan.
Step 3: Chop Vegetables
Chop the leeks, onions, and carrots.
Step 4: Simmer with Vegetables
Add to the pan with ribs and peas, water, and salt. Cook for 1.5 hours or until the meat is soft and falling off the bone.
Step 5: Make Dumpling Dough
Add the flour, suet, and salt to a bowl. Add the water and stir to make a dough.
Step 6: Shape Dumplings
Roll the dough into 3cm balls.
Step 7: Add to Pan
Add the dumplings to the pan.
Step 8: Simmer Dumplings
Simmer for 20 minutes to allow the dumplings to cook and expand.
Step 9: Serve
Serve, seasoned with black pepper.
