Roasted Cauliflower
This basic side dish is incredibly easy to whip up and complements a massive variety of meals, from Sunday roasts to spicy curries.
Ingredients
- 1 whole cauliflower
- 3 tbsp olive oil
- 1/4 grated whole nutmeg
- Salt and black pepper (to taste)
Method
Step 1: Trim the Cauliflower
Slice off the tough green leaves and heavy base stalks from your whole head of cauliflower.
Step 2: Break into Florets
Break the white head apart into individual florets, then slice them down into uniform, bite-sized pieces.
Step 3: Apply Oil and Spice Rub
Arrange the cut pieces flat across a baking tray. Drizzle evenly with your olive oil, then dress with freshly grated nutmeg, salt, and black pepper.
Step 4: Roast Until Charred
Slide the prepared baking sheet into a preheated oven at 200°C. Cook for 30 minutes until tender with beautifully crispy, golden edges, then serve up.
