Beef Koftas
These savory beef kofta skewers are simple to bring together and punch way above their weight in aromatic spice flavor.
Ingredients
- 500g beef mince
- 1 small onion (grated)
- 1 egg
- 1/2 tsp mustard seeds
- 1/2 tsp coriander seeds
- 6 whole peppercorns
- 1/4 tsp cumin seeds
- 2 dried chillies
- 1/2 tsp paprika
- 1/2 tsp salt
- 1 tbsp cornflour
- Lettuce, coleslaw, tomato (for serving)
- French fries & gluten-free wraps (for serving)
Method
Step 1: Build the Meat Base
Add your beef mince into a wide mixing bowl alongside the egg crack and your finely grated small onion.
Step 2: Dry-Toast the Whole Spices
Heat a completely dry frying pan over high heat. Toss in the mustard seeds, coriander seeds, cumin seeds, peppercorns, and whole dried chillies, swirling frequently until toasted and highly aromatic.
Step 3: Grind to Powder
Tip the toasted aromatics directly out into a pestle and mortar setup. Work the pestle in a circular motion until the pieces are crushed down into a fine, uniform spice powder.
Step 4: Incorporate the Seasonings
Pour your custom ground spice mixture directly over your raw mince base, following closely with the paprika, cornflour, and salt.
Step 5: Shape and Bake the Skewers
Incorporate the dry layers by hand, moulding the seasoned meat mixture firmly into oblong kofta configurations centered around long skewers. Place the sticks onto a lightly oiled baking sheet pan and bake at 180°C for 20 minutes.
Step 6: Plate Up
Slide the piping hot skewers out of the oven. Serve alongside a fresh salad bed of shredded lettuce, sliced tomato, and creamy coleslaw, packed with a side of hot French fries and warm gluten-free wraps.
