Chicken Fajitas
These fajitas are simple to pull together and only lightly seasoned, making them fantastic for kids to construct and eat.
Ingredients
For the Lime Marinade
- 2 chicken breasts
- 1 fresh lime
- 1/2 tsp crushed garlic
- 1/4 tsp dried mixed herbs
- 1/4 tsp ground coriander powder
For the Fajita Wraps
- 2 tsp vegetable oil
- 4 Mexican flour wraps
- 1 red pepper
- 1 green pepper
- 1 red onion
- 1/2 head of lettuce
- 50g cheddar cheese
Method
Step 1: Whisk up the Marinade
Squeeze the juices of your fresh lime inside a clean bowl. Stir in the crushed garlic, mixed herbs, and ground coriander powder.
Step 2: Steep the Meat Strands
Cut the chicken breasts down into thin strips and sink them into the wet bowl marinade. Transfer the bowl into the fridge to steep for at least 30 minutes.
Step 3: Sear the Infused Chicken
Empty the steeped chicken and its lime bowl juices directly into a hot frying pan lined with your oil. Fry over medium heat.
Step 4: Dice and Toss the Veg
Cut your red onion, red bell pepper, and green bell pepper down into long thin strips. Toss them directly into the pan alongside the cooking chicken.
Step 5: Brown the Skillet Mixture
Fry the skillet ingredients together until the meat strips are cooked completely through and have picked up a light golden sear.
Step 6: Shred the Crunchy Greens
Finely cut your half head of lettuce down into thin, crisp ribbons.
Step 7: Grate the Cheddar Block
Grate your block of cheddar cheese along a hand grater board.
Step 8: Construct and Roll
Assemble your fajitas by spooning portions of the warm pan chicken mixture, cheese shavings, and crisp lettuce into the center of a soft wrap. Fold the lower edge of the wrap over the filling, then roll tightly into a clean cylinder. Serve up hot!

These wraps are intentionally constructed with mild spices to stay fully kid-friendly. If you are serving adults or want an extra layer of heat, try adding a dash of hot sauce, sliced jalapeƱos, or raw sliced green chillies right before rolling the cylinder shapes.
