Hasselback Potatoes
Simple yet impressive, these potatoes feature crispy garlic-infused skins that pair perfectly with steaks or roast dinners.
Ingredients
- 1.8 kg potatoes
- 3 cloves garlic
- 4 tbsp olive oil
- Salt & pepper (to taste)
Method
Step 1: Slice Guide
Use two wooden spoons placed on either side of the potato as a consistent guide to prevent slicing all the way through the bottom.
Step 2: Prepare All Potatoes
Repeat the careful slicing technique for your remaining potatoes.
Step 3: Season and Drizzle
Transfer the potatoes into a roasting tin. Crush your garlic and sprinkle it over, then finish with a generous drizzle of olive oil, salt, and black pepper.
Step 4: Roast Until Golden
Mix the potatoes to ensure they are coated in the oil and garlic, ensuring the sliced edges are facing upwards. Roast at 160°C for 1 hour until crisp and tender.
