Hasselback Potatoes
Simple to make but very tasty with their crispy garlic skins, they look impressive as an accompaniment to meals such as a steak or a roast dinner. They are dairy and gluten free.
Preparation time - 10 minutes
Cooking time - 1 hour
Ingredients (serves 4)
1.8 kg potatoes
3 cloves garlic
4 tbsp olive oil
salt
pepper
To cook
1. Use two wooden spoons when slicing each potato as a consistent way to prevent cutting all the way through.
2. Repeat for all the potatoes.
3. Add the potatoes to a roasting tin. Crush the garlic and sprinkle over the potatoes, along with a drizzle of olive oil. Season with salt and pepper.
4. Mix the potatoes to ensure they are all evenly covered. Face the sliced sides upwards. Cook for 1 hour at 160c. Serve.
