Spiced Salmon Fillets

This is an easy to make meal which kids love to make and eat. The mild spices work really well with the salmon.

Spiced Salmon Fillets



Preparation time - 20 minutes
Cooking time - 15 minutes

Ingredients (serves 1)

2 salmon fillets
1/4 tsp dried basil
1 tsp paprika
1/2 tsp turmeric
1/2 tsp 5 spice powder
1/2 tsp cumin
3 tbsp oil
2 eggs
120g sweetcorn
60g pack of noodles, unseasoned
1 tortilla wrap
tomato sauce

To cook



1. Add the spices to a bowl.

2Add 1 tbsp of the oil and mix to make a paste. Spread over the salmon fillets, leaving a little paste to spare.

3. Add 1 tbsp of the oil to a frying pan and fry the salmon on a high heat for 5 minutes.

4. Mix the eggs with the sweetcorn. Add a sprinkle of salt and pepper and a little of the spice paste.

5. Add boiling water to the noodles and leave to soak to 5 minutes.

6Turn over the salmon and cook for a further 5 minutes.

7.  Drain the noodles. Stir in the remaining spice paste.

8. Fry the egg mix in 1 tbsp of the oil. Scramble the egg.

9. Once the egg is cooked, add to the serving bowl.

11.  Peel the skin from the salmon.

12. Serve with a tortilla wrap and a drizzle of tomato sauce.
