Spiced Salmon Fillets
This easy-to-make salmon meal is an absolute hit that kids love to build and eat. The mild warmth of the spices balances beautifully against fresh salmon fish.
Ingredients
- 2 salmon fillets
- 1/4 tsp dried basil
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp 5 spice powder
- 1/2 tsp cumin
- 3 tbsp oil
- 2 eggs
- 120g sweetcorn
- 60g pack of unseasoned dry noodles
- 1 flour tortilla wrap
- Tomato sauce (for drizzling)
- Salt & pepper (to taste)
Method
Step 1: Prep the Dry Spices
Measure out your dry basil, paprika, turmeric, 5 spice powder, and ground cumin directly inside a small bowl.
Step 2: Bind the Wet Paste Rub
Pour 1 tablespoon of your oil into the bowl and whisk into a thick paste. Smooth the rub evenly across the faces of both salmon fillets, leaving a tiny bit of residual paste on the edges of the bowl for later.
Step 3: Sear the Salmon First Side
Drizzle 1 tablespoon of your oil into a frying pan over high heat. Lay your coated salmon fillets in skin-side down and cook undisturbed for 5 minutes.
Step 4: Build Egg and Corn Fillers
Whisk the raw eggs and sweetcorn kernels inside a container. Adjust with a light dust of salt, pepper, and incorporate a tiny lick of your leftover wet spice rub paste from earlier.
Step 5: Steep the Noodle Strands
Cover your dry unseasoned noodles in clean boiling water and leave to stand and soak through for 5 minutes.
Step 6: Flip and Sear Finish
Turn the salmon fillets over carefully in the skillet pan and let them fry for a final 5 minutes on the opposite side.
Step 7: Flavor the Strands
Drain your soft noodles fully, then return them to the bowl and stir through your residual bit of wet spice paste for an extra kick.
Step 8: Scramble the Egg Mix
Pour your final tablespoon of cooking oil into another frying pan. Pour the corn-egg liquid base in and scramble gently with your wooden spoon.
Step 2: Collect Sweetcorn Eggs
Once your sweetcorn eggs are scrambled and cooked through, slide them out into your main clean serving dish.
Step 10: Toss Strands and Egg
Incorporate your savory noodle strands straight into the dish alongside the hot scrambled egg, mixing the bases.
Step 11: Skin the Salmon Fillets
Carefully peel away and discard the outer skin layer from both of your cooked spiced salmon portions.
Step 12: Wrap and Dish Up
Serve up hot alongside a soft tortilla wrap and complete with a zig-zag drizzle of sweet tomato sauce across the layout.
