Sticky Spare Ribs
These Chinese-style ribs are covered in an incredibly tasty, sweet and savoury sticky glaze sauce.
Ingredients
- 1kg pork ribs
- 2 tbsp oil
- 4 tbsp BBQ sauce
- 2 tbsp dark soy sauce
- 2 tbsp sweet chilli sauce
- 2 garlic cloves
- 1 tbsp chopped ginger
- 4 tbsp honey
- 5 tbsp brown sugar
- 1/2 tsp 5-spice powder
- 4 tbsp sherry
- 1 spring onion
Method
Step 1: Boil the Ribs
Place the pork ribs into a large pan of water and boil them for 30 minutes until tender.
Step 2: Transfer to Frying Pan
Carefully lift the boiled ribs out of the water and place them into a frying pan prepped with your oil.
Step 3: Crisp and Brown
Fry the ribs thoroughly over medium-high heat until they become beautifully browned on all sides.
Step 4: Build the Sticky Glaze
In a separate frying pan or wide saucepan, add the BBQ sauce, dark soy sauce, sweet chilli sauce, garlic, ginger, honey, 5-spice powder, brown sugar, and sherry. Mix well and gently bring the ingredients to a boil to form the sticky glaze base.
Step 5: Coat and Glaze
Add your browned pork ribs directly into the glaze pan. Simmer together on low heat for 10 minutes, rolling the ribs frequently so they absorb the sauce and become completely sticky.
Step 6: Garnish and Plate
Garnish the ribs with a generous sprinkle of thinly sliced spring onions. Serve hot on their own as an appetizer or pairing with noodles as a full main dish.
