Lentil Curry
A mildly spiced curry that is suitable for kids.
Ingredients
- 200g lentils
- 1 onion
- 1 inch garlic
- 1 inch ginger
- 250ml passata
- 1/4 tsp turmeric
- 1/2 tsp paprika
- 1 tbsp tandoori masala
- 1/2 tsp cumin
- 1/2 tsp salt
- 4 tsp sugar
- 2 tbsp tomato sauce
Method
Step 1: Boil the Lentils
Rinse the lentils thoroughly and boil them in a pan of water for 15 minutes.
Step 2: Sauté Aromatics
Chop the onion and fry for 5 minutes, then add the finely chopped garlic and ginger and cook for a further 2 minutes.
Step 3: Add Passata
Pour the passata into the pan with your onion mix.
Step 4: Combine and Blend Smooth
Add the boiled lentils into the pan and use a stick blender to process the mixture until it is completely smooth.
Step 5: Season and Spice
Add the turmeric, paprika, tandoori masala, cumin, salt, sugar, and tomato sauce to the blended base. Mix well.
Step 6: Simmer and Serve
Simmer the smooth curry gently on low heat for 10 minutes, then serve.
