Roasted Pepper Sauce
Great for adding to pasta dishes, or served cold as a dipping sauce.
Ingredients
- 3 peppers
- 1 tbsp oil
- 250ml passata
- 3 cloves garlic
- 1/4 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp onion powder
- 1/4 tsp sugar
- 6 Basil leaves
Method
Step 1: Roast the Peppers
Roughly chop the peppers. Roast in a 180°C oven for 30 minutes.
Step 2: Sauté the Garlic
Chop the garlic and fry in a pan with the oil until lightly brown.
Step 3: Blend and Simmer
Blend the roasted peppers, garlic, passata, salt, black pepper, sugar, smoked paprika, onion powder, and basil leaves together until completely smooth. Pour the mixture back into a pan, simmer gently for 5 minutes, then serve.
