Homemade Baileys

Homemade Baileys

Baileys is traditionally an Irish whiskey cream, but this rich homemade variant turns to smooth scotch whiskey. Dead simple to mix and perfect over ice.

Step 2: Emulsify on Slow Speed
Empty the components together into a large mixing jug. Process the liquids with an electric mixer running at a slow, controlled speed setting until completely smooth. Keep the speed down to prevent foaming.

Step 3: Chill and Serve over Ice
Decant the whiskey cream into an airtight glass bottle and store away inside the refrigerator. This mixture will hold its structural freshness cleanly for a few weeks if kept properly chilled. Serve up over lowball glasses packed with clear ice blocks.
